Magic Cookie Dough

The Great Leprechaun Escape (and Their Secret "Magic" Cookie Recipe)



We almost had him! Our traps were set with every bit of glitter and gold we could find, but he still was able to slip though the cracks and glue traps.


The good news? He left behind some cookie dough and this note:


Your trap was quite clever and grand,

The best I have seen in the land!

But I’ve slipped through the cracks,

Left some dough in my tracks,

For the luckiest bakers at hand!


When we baked them..WOW what an amazing St. Patricks Day surprise!


While I don’t possess leprechaun magic myself, I used a little bit of my nutrition 'sleuthing' to figure out his secret! I discovered that by using a special ingredient, sunflower seed butter!!!!, we can actually recreate that magical green transformation right in our own kitchens. It’s a bit of nature’s science that looks exactly like a leprechaun’s trick!


Magic Leprechaun Cookies ☘️

Prep time: 10 mins

Bake time: 8-10 mins

Yield: 8 cookies


INGREDIENTS

1/2 cup Sunflower seed butter (no added oils or sugar)

1/4 cup Maple syrup

1/2 Egg (I scramble the egg in a cup and just pour half into the batter)

3 tbsp Coconut flour

1/2 tsp Baking soda (the "magic" activator!)

1/8 tsp Salt

1/4 cup Chocolate chips (highly recommended)


INSTRUCTIONS

  1. Whisk together the sunflower seed butter, maple syrup, and egg. Stir in the dry ingredients until smooth, then fold in your chocolate chips.

  2. Refrigerate the dough for about an hour or throw in the freezer for 10-15 mins. It makes the dough much easier to handle (leprechauns are slippery, and their dough is too!).

  3. Scoop a tablespoon of dough and roll into balls, place them on a parchment-lined sheet, and flatten slightly with your fingertips.

  4. Bake at 350°F for 8–10 minutes.


When you first pull them out, they look like normal cookies. But wait until they cool! Get ready to be amazed by this colorful surprise.




The Science

So why do they turn green? This is the "magic" the leprechaun left behind! Sunflower seed butter contains chlorogenic acid. When it reacts with the baking soda in the oven, it creates a green hue as the cookies cool down. It is completely safe to eat, nutrient-dense, and 100% leprechaun-approved.


Pro-Tip: If you want to ensure a deep green, don't add any acidic ingredients like lemon juice, which would actually stop the reaction!
